Chicken Bruschetta & Sautéed Green Beans

If you couldn’t tell I’m all about the quick, easy & of course healthy recipes 🤣🍽👩🏻‍🍳 So here’s another lunch/dinner option for ya!

Chicken dish and topping:

  • 4 chicken breasts

  • 1/2 chopped onion

  • 1 1/2-2 cups diced tomatoes

  • garlic

  • salt & pepper

  • chopped basil & cilantro

  • EVOO

  • lemon juice from 1/2 of a lemon

  • balsamic vinegar & red wine vinegar

Green beans side:

  • green beans

  • rinsed chickpeas

  • salt & pepper

  • garlic

  • red pepper flakes

Details:

  1. Sauté chicken breast in pan with EVOO or spray. Season as you like.

  2. While chicken is cooking sauté the green beans in a separate pan. Once the green beans are almost fully cooked, throw in the chickpeas & cook for another 2-3 mins.

  3. In a bowl combine chopped tomatoes, onions, seasonings, EVOO, lemon juice, balsamic vinegar & red wine vinegar. Drizzle on top of chicken once it’s completely cooked & enjoy! 😋
