Healthy Teriyaki, Ginger, Sesame Turkey Lettuce Wraps

Lettuce wraps are such a great, delicious & easy dish whether you’re cooking for one, two or a group full of people. Although you can have them year round, I love making them once the weather starts to get nicer!

The perfect lunch/dinner dish!

 

Ingredients:

Turkey:

+ 1 pack of 99% lean ground turkey breast

+ 8-10 tbsp of marinade (I used Wegmans organic teriyaki, ginger, sesame marinade) I chose this one because it’s low in sugar and has no artificial flavors, colors or additives

+ 1 tbsp salt

+ 1/2 clove of garlic

+ 1 tbsp fresh ginger

+ 1 tbsp of cumin

+ 1 tbsp pepper


Vegetables:

+ 1 head of lettuce rinsed and patted dry

+ 1 container of baby tomatoes chopped

+ 1 medium yellow onion sliced thin

+ 1/2 clove of garlic

+ 1 tbsp salt

+ 1 tbsp pepper

+ juice from half of a lemon

+ pico de galo (for on top)

 

dEATS:

  1. Coat a medium saucepan and a large saucepan with non stick spray. Add 1/2 of a garlic clove to each.

  2. Turn heat up to medium. In the large saucepan and add the ground turkey breast.

  3. In the medium saucepan add the sliced yellow onion, and chopped tomatoes.

  4. Chop up the ground turkey and once it is almost completely cooked, season it with the cumin, salt, pepper, ginger & marinade.

  5. As the turkey continues to cook, add seasoning to the vegetables - lemon juice, salt & pepper. Let vegetables cook until they become slightly browned and the onion softens.

  6. Form lettuce leaves into cup shapes and fill with the turkey mixture. Top the lettuce wraps with the sautéed vegetables, pico de galo and anything else you’d like!
